Easy Pumpkin Cookies (I haven't tried these yet, but intend to soon!)
1 box spice cake mix
1 can pure pumpkin -- (15 oz.)

Mix together and drop by spoonfuls onto cookie sheet sprayed with cooking spray. Bake at 350 for around 10 minutes or until firm. Allow to cool. Makes 48 cookies. These are so soft and good.


Oven Fried Sesame Chicken
4 chicken breasts (3 oz each)
2 tablespoons Soy sauce
1 minced garlic clove
Place soya sauce and garlic in a bowl add chicken turning once
remove chicken from soy sauce.
1 In a large zip lock bag -- add:
3 tablespoons sesame seeds
3 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon pepper

Add chicken and shake until coated. Place chicken in a baking dish, well sprayed with cooking oil. Place 1 tsp. whipped butter (optional) on each chicken breast and bake at 400 for 30 minutes, or until done.


Chili
1 lb lean ground beef, browned
1 onion sauteed w/ the beef
2 cans kidney beans, drained
2 cans pinto beans, drained
1 jar Pace picante sauce
3 c water
1 T chili powder
1 tsp garlic powder
salt and pepper to taste

Throw it all in a pot, bring to a boil, then cover and simmer at least 30 minutes. Top w/ ff greek yogurt and/or lowfat shredded cheese. 


COLA CHICKEN (tastes like barbecue...mmmmm)
4 boneless chicken breast halves
1 can diet cola
1 cup ketchup
1 green pepper -- sliced
1 onion -- sliced

Mix coke and ketchup together in a large pan. Add onions and peppers. Bring to a boil and add the chicken breasts. Simmer covered for about an hour. Remove the chicken and cook the sauce with the lid off until it thickens. Serve with brown rice.

CHICKEN SPAGHETTI  (my current fave)

1/2 cup Onion
1 can Campbell's 98% Fat Free Cream of Chicken Soup
1 can Campbell's 98% Fat Free Cream of Mushroom Soup
1 4oz. jar Sliced Mushrooms
1 can Rotel Tomatoes
12 oz. package Spaghetti

Cook spaghetti according to package instructions. Saute onion and mushrooms. Add soups and tomatoes. Heat until well mixed. Mix with cooked spaghetti. Bake in 2qt. dish for 30 minutes at 350ยบ.

TACO SOUP (so many versions of this, but I love this one)

2 cans of diced tomatoes or rotel
2 cans of kidney beans
2 cans of corn
1 packet ranch seasoning
1 packet taco seasoning
1-2 cups of water (depending on how soupy you want it)
1 lb ground beef (only if I have behaved that day, otherwise, I make it meatless)

Dump all the ingredients together and heat. Let it simmer for 30 min. to an hour.
I like to cut a tortilla in to chip like pieces and bake them for 8 minutes at 350 and eat them with.


MUSHROOM CHICKEN and RICE  (Crockpot cooking...yay!)

3 to 4 chicken breasts thawed
1 jar of mushrooms
2 cans of fat free Cream of Mushroom Soup

Combine those ingredients in a crockpot on high for 3-4 hours or until chicken is cooked through.
Add brown rice about 15 minutes before you are ready to eat and let it cook in the sauce.
